Turkey Tortilla Casserole

Yield: 10-12 Servings

Ingredients

½ cup onion (chopped)

½ cup chicken broth

3 cups cooked turkey (chopped)

6 (10-inch) tortillas (torn in pieces)

1 (4 oz.) can green chili peppers, diced

1 (10ox) can cream of chicken soup

1 tsp. pepper

1 cu cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup salsa

Directions

In a medium saucepan, combine onion, chicken broth and celery.

Bring to a boil; reduce heat.

Simmer covered, for 5 to 6 minutes or until vegetables are just tender.

In a large bowl, stir together undrained onion mixture, cooked turkey, tortillas, chili peppers, soup and pepper.

Reserve ½ cup of each cheese and set aside.

Stir remaining cheese into tortilla mixture.

Transfer mixture to a lightly reased9x13-inch baking dish.

Top with salsa and reserved cheeses.

Bake in a 350 degrees F oven for about 30 minutes or until heated through.

Let stand for 5 minutes before serving.
